Serving: Makes 24 pieces balss and 2-3 pieces per serving
INGREDIENTS:
- 3 cups boiled and mashed mung beans or monggo in Filipino
- 1 26g powdered milk
- 1/4 cup brown sugar
- 1/2 cup chopped ripe jackfruit or langka in Filipino
- 1/4 cup all purpose flour
- cooking oil for frying
- sugar for dusting
PROCEDURE:
- Combine mashed mung beans, powdered milk, sugar, jackfruit, and flour in bowl.
- Mix well to fully combined. When fully incorporated, scoop around 2 tbsp of mixture and form into small balls similar to a munchkin.
- Heat oil. Fry mung balls until golden brown in color. Transfer on a plate lined with paper towels to remove excess oil. Sprinkle with sugar while still hot. Serve as a felling snacks or desert after meal.

Perhaps you might be wondering what is gourd in Filipino language. Gourd is an English term for the vegetable “upo” in the native language of Filipino. This is just my another PINOY EXOTIC FOOD presentation for Pinoy dish lovers.
Upo or gourd is one of the most common vegetable grown locally in the Philippines. A bowl of this soupy dish and a streaming cup of rice provide the perfect comfort food during cold and rainy days for Pinoys. This is also great when you are watching your favorite Pinoy TV channel at home.
Preparation time: 20 minutes plus 2 hours to soak the salted fish.
Cooking time: 15 minutes
Servings: 6 to 8 persons
INGREDIENTS:
- 2 tbsp cooking oil
- 1 thumb ginger, sliced
- 1 tbsp crushed garlic
- 1/4 cup sliced onion
- 2 cups shredded salted fish (whole salted fish, soaked in water for 2 hours, drained then shredded)
- 3 cups cubed, seeded upo or gourd
- 1 liter water
- 1 11g chicken broth cube
- 2 cups malunggay or horse radish leaves in English
PROCEDURE:
- Heat oil. Saute ginger, garlic and onion until limo and fragrant.
- Stir in salted fish and cook for 2 minutes. Add in gourd and cook for another 30 seconds.
- Pour in water and bring to a boil. Add the chicken broth cube. Simmer for another 5 minutes. Stir in horse radish leaves. Serve hot for best results.

Different flavors and aroma come together in this Asian inspired salad. Everyone will surely get their appetites going with just a bit of the green papaya mixed with the salad’s sweet-tangy vinegar sauce and crunchy fried fish. You can as well try to listening to some popular PINOY JOKES while preparing this recipe.
Preparation time: 30 minutes plus 20 minutes to chill
INGREDIENTS:
- 3 cups of grated unripe papaya
- 1 1/2 cups of grated carrots
- 1/4 cup chopped wansuy
- 1/4 cup hibe (dried shrimp), soaked in water for 10 minuted then drained
- 3 pieces siling labuyo (red hot chili pepper)
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 1/4 cup calamansi jiuce
- 1/4 cup vinegar
- 1 8g seasoning mix
- 2 tbps fish sauce or salt to taste
- shredded left over fried fish
- crispy fried tofu or fried wanton wrappers (optional)
PROCEDURE:
- Toss papaya, carrots and wansuy in a bowl, Set aside in the refrigerator to chill.
- Using a mortar and pestle, coarsely crush the hibe and the red hot chili pepper together.
- Whisk in oil, calamansi juice and vinegar into the mixture until mixture is full incorporated.
- Season with the seasonal mix and fish sauce to taste.
- To assemble salad, toss the prepared vegetables in the prepared dressing. Transfer on a plate and top with fried left over fish, fried tofu or crispy wanton wrappers if desired.
